4 Egg Yolks 50 g Sugar |
Heat the oven to 150C Place a tray of water in the oven Whisk the egg yolks and sugar together |
375 ml Cream 125 ml Milk 1 tsp Vanilla essence |
Heat the cream in a double boiler Add the eggs & sugar put into small dishes Put the dishes in the tray of water in the oven cook for 10-15 mins allow to cool |
Either: make caramel and pour it on Or: sprinkle with sugar and use a blowtorch to caramelise it |
